ABC Chicken Bone Broth Soup

Hey friends!

Just had to share this yummy recipe with you all. It’s a rainy day and we all have the sniffles so I made up a pot of this bone broth soup for the babes and I. It was baby and toddler approved in my household. The bone broth I made out of a chicken I had cooked up a few days. I let it simmer over night in the crock pot for a delicious mixture.

Benefits of bone broth -

Minerals and antioxidants

Improves immune system

Healing compounds

Reduces intestinal inflammation

Improved gut health

2 cups of chopped cooked chicken

1 tbsp of oil

2 stalks of celery, chopped

2 carrots, chopped

1 small onion, chopped

1 bay leaf

1 tsp rosemary

1 tsp thyme

2 tsp garlic

3 cups of stock, 1-2 cups of water

1/2 juice of one lemon

1 cup of ABC noodles ( Orzo would be a great option too) – this can be omitted if needed

Fresh parsley for garnish

- Add oil and chopped veggies to pot, cook until tender 3/4 minutes

- Add spices, cook to aromatic, then add chicken and stir

- Add chicken, stock (plus water), lemon juice, chicken and noodles

- Bring to boil for about 2 minutes then reduce to medium/low heat, cook until veggies are soft and noodles are done

- Garnish with parsley if desired, add salt / pepper as preferred

I hope your little ones find this recipe as wonderful as mine.

Cheers to healthy living,

Priscilla Marie, MS, RD
