Easy Chia Berry Jam

One of the many great things about summer is the amount of fresh and local food that is available. Recently, a mommy friend of mine had a gorgeous supply of raspberries to be picked. As a mother and as a Dietitian I love exposing children to food especially from its source. So I loaded both kids up on a warm summer day not knowing as we drove away I was leaving the sunblock at home. (#momfail).

We spent some time that day gathering raspberries, baby napping in the Ergo and Chael closely watching the chickens that were in the bushes with us. Oddly, Chael wasn’t interested in trying a raspberry until we got into the car. Did he like them?

Finding the best way to preserve them for us was tricky. I have never made jam before and I didn’t care for the idea of adding a bunch of sugar to these yummy berries. After browsing Pinterest for a while, I decided to make a chia jam. I liked the idea of having something to add to my yogurt, peanut butter sandwiches or my morning oats. After reviewing a handful or so of recipes I decided on a mash of them all. That is how I do most of my cooking. I browse a bunch of recipes for a certain dish, I think about it for a while then I come up with my own variation.

 

Chia jam recipe

 

Raspberry Chia Jam

Ingredients
4 cups of raspberries
1 cup of water
1/4 cup pure maple syrup
Zest of one lemon
3 tablespoons of chia seeds

Raspberry chia jam

Directions

Boil all ingredients in a saucepan except chia seeds.

Once you begin to get a foam at the top, turn off. Pour jam into a bowl then add chia seeds. Allow the jam to set and cool down on the countertop. Once cool place into the refrigerator to continue to gel.

Notes: You may want to use more or less of the water and chia seeds. The amount you use will determine how thick or fluid your jam will be. I liked the idea of using chia seeds instead of pectin because of the added health benefits ( Omega-3s, Fiber and Protein).

To store the extra jam that I had made I used these Ball freezer containers. They worked perfect. How about you, have you been berry picking this summer yet? What is your favorite way to preserve or use them?
