Mommy’s Clean Energy Bites

The past 5 months as a new parent has taught me so much. One thing that was reconfirmed is planning meals & snacks is really important!! In efforts to try to keep a somewhat clean diet I came up with these yummy energy bites to help me power through my day. Making sure to have on hand healthy snacks that won’t leave me sluggish helps ensure that I have lots of energy to keep up with my sweet little one.

I have made these a few times, but it took a little bit to get the right ratio down to make the perfect bite.


Ingredients –
1 cup of Old Fashion Oats
3/4 cup of nut or seed butter ( I have used peanut butter and sunflower seed butter for this recipe)
2 tbsp of (each) unsweetened coconut flakes, ground flax meal, chopped dates & Chia seeds
2 tsp of sweetener ( I have used coconut sugar & pure maple syrup)

Directions –
Warm butter in microwave for 30 seconds. Mix all ingredients in an air tight dish then cover with lid. Place in freezer for at least 1 hour. Once firm, make small balls out of the mix. That’s it, Enjoy!
